Cucumber and Blueberry Salad
Servings: 6

2 cups Rockridge Orchards Japanese cucumber, large dice
2 cups Sidhu Farms blueberries, rinsed and picked over
salt and pepper, to taste
1/4 cup Napoleon white balsamic vinegar
2 tablespoons mint leaves, chiffonade
1/4 cup French feta


Combine the cucumber, berries, mint, and feta. Add the vinegar in 1 tablespoon increments tasting as you go until you get the flavor you like. You might need to add some salt and pepper to taste.

Remember this is to serve your palate. Adjust the quantities and ratios for your taste, more or less cucumber, berries, feta, mint etc.
